How to Make Authentic Uruguayan Chajá: A Step-by-Step Recipe

Ingredients:
- 4 eggs
- 1 cup of sugar
- 1 cup of flour
- 1 teaspoon of baking powder
- 1 teaspoon of vanilla extract
- 1/2 cup of water
- 1/2 cup of white wine
- 1 can of peaches in syrup
- 1 1/2 cups of heavy cream
- 1/2 cup confectioner's sugar
- 2 teaspoons of cornstarch
- 1/4 teaspoon of cream of tartar
Instructions:
- Preheat the oven to 350°F. Line a baking sheet with parchment paper.
- In a large mixing bowl, beat the eggs and sugar until light and fluffy.
- Add the flour, baking powder, and vanilla extract to the bowl and mix until it is well combined.
- Pour the batter onto the prepared baking sheet, spreading it evenly. Bake for 12-15 minutes or until the cake is golden brown and then remove the cake from the oven and let it cool.
- In a small bowl, mix the water and white wine.
- In a separate bowl, beat the heavy cream, confectioner's sugar, and cornstarch until stiff peaks form.
- Add the cream of tartar and continue beating until it is well combined.
- To assemble the Chajá, place the cake layer on a serving platter and brush the cake with the wine mixture.
- Spread a layer of whipped cream on top of the cake. Add the peaches on top of the whipped cream.
- Repeat steps 8 & 9 with the remaining layers and top the Chajá with a layer of meringue.
- Serve chilled.
